Cauliflower pizza with chicken, pumpkin and barbecue sauce
3 cup(s), cut into florets
½ medium, finely chopped
2 medium, lightly beaten
Pumpkin, cooked without added fat
200 g, or baked, sliced
Cooked skinless chicken breast
97% fat-free cottage cheese
1 tbs, torn, to serve
- Preheat oven to 220°C. Line a baking tray with baking paper.
- Process cauliflower in a food processor until fine crumbs form. Transfer to a large bowl. Add onion and egg and stir to combine. Spread cauliflower mixture over prepared tray to form a 5mm-thick round base. Bake for 25–30 minutes or until firm and light golden.
- Spoon sauce over pizza base. Top with pumpkin, chicken, sage and cheese. Season with salt and pepper. Bake for 5–10 minutes or until warmed through and cheese is light golden.
