Cauliflower, mint and feta fritters

These crispy, golden, cheesy fritters are the perfect way to banish those mid-afternoon munchies.
300 g, florets
2 tbs, finely chopped
Reduced fat feta cheese
20 g, finely chopped
Wholemeal self-raising flour
¼ cup(s), (40g)
1 x 3 second spray(s)
- Steam the cauliflower over a saucepan of boiling water for 10 minutes or until tender. Drain well. Place in a food processor and process until smooth. Transfer to a bowl. Whisk in the egg, mint, feta and flour until combined. Season with salt and pepper.
- Lightly spray a large non-stick frying pan with oil and heat on medium-high. Drop tablespoonful quantities of cauliflower mixture into the pan.
- Cook in batches for 3-4 minutes each side or until golden and cooked through.
SERVING SUGGESTION: Lite tzatziki.
