Cardamom and cinnamon baked apples
Red apple, unpeeled
4 medium, cored
Dry rolled oats
45 g, (1/2 cup)
2 individual, (2 tbs), pitted, coarsely chopped
Reduced fat oil spread
½ tsp, ground
99% fat-free vanilla yoghurt, sweetened

- Preheat oven to 180°C or 160°C fan-forced. Using a small knife, cut a 5mm slice from the top of each apple. Then cut a shallow groove around the centre of each apple (see tip). Place apples in a small ovenproof dish.
- Place oats, dates, spread, cardamom and half the cinnamon in a small bowl. Using your fingertips, rub spread into oat mixture. Spoon oat mixture evenly among apple cavities. Bake for 40 minutes or until tender.
- Meanwhile, combine yoghurt and remaining cinnamon in a small bowl. Serve apples with cinnamon yoghurt.
