Cardamom and cinnamon baked apples

Cinnamon adds sweetness when cooking so it makes it a great ingredient when you are trying to cut back on sugar. When paired with cardamom, oats and vanilla yoghurt it transforms the humble apple into a scrumptious dessert.

Ingredients

Red apple, unpeeled

4 medium, cored

Rolled oats, dry

45 g, (1/2 cup)

Fresh dates

2 individual, (2 tbs), pitted, coarsely chopped

Reduced fat oil spread

2 tsp

Cardamom

½ tsp, ground

Ground cinnamon

1 tsp

Vanilla yoghurt, 99% fat-free, no added sugar

Preheat oven to 180°C or 160°C fan-forced. Using a small knife, cut a 5mm slice from the top of each apple. Then cut a shallow groove around the centre of each apple (see tip). Place apples in a small ovenproof dish.

Place oats, dates, spread, cardamom and half the cinnamon in a small bowl. Using your fingertips, rub spread into oat mixture. Spoon oat mixture evenly among apple cavities. Bake for 40 minutes or until tender.

Meanwhile, combine yoghurt and remaining cinnamon in a small bowl. Serve apples with cinnamon yoghurt.
