Caramelised banana galettes

Reduced-fat puff pastry
1 individual, just thawed
2 small, thinly sliced diagonally
Low-fat vanilla yoghurt
- Preheat oven to 200ºC or 180ºC fan-forced. Line a baking tray with baking paper.
- Cut pastry sheet into 4 rectangles. Place pastry rectangles on prepared tray and prick all over with a fork. Bake for 8–10 minutes or until golden.
- Arrange banana slices on pastry rectangles, leaving a 1cm border around the edge. Combine the brown sugar and cinnamon in a small bowl and sprinkle over banana. Bake galettes for 8–10 minutes or until pastry is golden and banana is caramelised.
- Serve galettes dusted with the icing sugar and topped with the yogurt.
