Caprese pasta salad

Such a simple salad yet full of flavour and only 6 ingredients.
Dry orecchiette pasta
400 g, mixed variety, chopped
1 small, finely chopped
100 g, chopped
½ cup(s), small leaves, plus extra to garnish
2 tbs, balsamic variety
- Cook pasta in a large saucepan of boiling salted water, following packet instructions, or until just tender. Drain. Refresh under cold water and drain. Transfer to a large bowl.
- Add tomatoes, onion, bocconcini, basil and dressing to pasta and toss to combine. Set aside for 10–15 minutes before serving.
TIP: You can use any small tomato variety instead of mixed tomatoes and any type of pasta. Setting the salad aside for 10–15 minutes allows the pasta to absorb flavours from the tomatoes, basil and dressing.
