Humble snags become a food fiesta when you add some Mexican magic.
Extra lean beef sausage
8 thin, (460g)
4 small, (4 x 40g)
2 medium, deseeded, chopped
½ medium, finely chopped
2 tbs, chopped
Fresh red chilli
1 tsp, finely chopped
1 cup(s), shredded, (60g)
1 medium, sliced
Extra light cheddar cheese
⅓ cup(s), grated, (40g), grated
Light sour cream
- Preheat a chargrill or barbecue grill over medium heat. Cook sausages, turning occasionally, for 10 minutes or until browned and cooked through.
- Meanwhile, wrap tortillas in foil and place on the barbecue for 5 minutes or until warmed through.
- Combine tomatoes, onion, coriander, juice and chilli in a bowl.
- Top tortillas with lettuce, sausages, tomato salad, avocado, cheese and sour cream. Roll to enclose filling. Serve.
SERVING SUGGESTION: Cucumber and lettuce salad, drizzled with lemon juice.TIP: To deseed a tomato, cut it in half and use a teaspoon to scoop out the pulp and seeds.
