Humble snags become a food fiesta when you add some Mexican magic.

Ingredients

Extra lean beef sausage

8 thin, (460g)

Wholemeal tortilla

4 small, (4 x 40g)

Tomato(es)

2 medium, deseeded, chopped

Red onion

½ medium, finely chopped

Fresh coriander

2 tbs, chopped

Lime juice

2 tsp

Fresh red chilli

1 tsp, finely chopped

Iceberg lettuce

1 cup(s), shredded, (60g)

Avocado

1 medium, sliced

Extra light cheddar cheese

cup(s), grated, (40g), grated

Light sour cream

2 tbs

Instructions

  1. Preheat a chargrill or barbecue grill over medium heat. Cook sausages, turning occasionally, for 10 minutes or until browned and cooked through.
  2. Meanwhile, wrap tortillas in foil and place on the barbecue for 5 minutes or until warmed through.
  3. Combine tomatoes, onion, coriander, juice and chilli in a bowl.
  4. Top tortillas with lettuce, sausages, tomato salad, avocado, cheese and sour cream. Roll to enclose filling. Serve.

Notes

SERVING SUGGESTION: Cucumber and lettuce salad, drizzled with lemon juice.TIP: To deseed a tomato, cut it in half and use a teaspoon to scoop out the pulp and seeds.
