This quick and easy tortilla won't sacrifice flavour for time! Baked beans are brought alive with fresh tomato, spinach and creamy feta.

Ingredients

Baked beans in tomato sauce

1 cup(s), (270g)

Lime juice

1 tbs

Tortilla, gluten-free

72 g, (2 x 36g tortillas)

97% fat-free cottage cheese

cup(s), (80g)

Tomato(es)

1 medium, chopped

Baby spinach leaves

30 g

Instructions

  1. Place baked beans in a small saucepan over medium heat. Cook, stirring, until hot. Stir in lime juice.
  2. Heat tortillas following packet instructions. Top half of each tortilla with bean mixture. Spoon over cottage cheese and top with tomato and spinach. Roll to enclose filling. Serve.

Notes

TIP: You can add ½ teaspoon chilli powder when cooking the beans if you’d like a little heat.
