Blueberry and goats cheese rocket salad
Quick and easy, the bitter and sweet flavours will make this dish everyone's favourite
Fruit loaf, white
Soft goat's cheese
120 g, crumbled
30 g, coarsely chopped
- Toast the raisin bread and cut into bite-sized pieces.
- Place the bread, rocket and blueberries on a serving platter. Season with salt and drizzle with vinegar. Toss to combine. Sprinkle with the goat’s cheese and walnuts.
TIP: Use any of your favourite berries in this salad: try strawberries, blackberries, raspberries or a mixture of them all.
