Bircher muesli with peaches

Ingredients
Peach(es)
3 medium, ripe, stones removed
Unsweetened almond milk
350 ml
Rolled oats, dry
1⅓ cup(s), (120g)
Vanilla bean extract, alcohol free
½ tsp
99% fat-free, plain or natural yoghurt, unsweetened
1 cup(s), (240g)
Flaked almonds
2 tbs, toasted
Honey
2 tsp
Instructions

Coarsely chop 2 of the peaches. Process chopped peaches in a small food processor until smooth. Combine peach purée in a large bowl with milk, oats, vanilla and yoghurt. Cover and refrigerate for 4 hours or overnight.

Slice remaining peach. Serve muesli topped with sliced peach, almonds and honey.
