120 g, button variety, halved
Baby spinach leaves
1 large, roma variety, quartered lengthways
42 g, (2 rashers) fat trimmed

- Lightly spray a large non-stick frying pan with oil and heat over medium-high heat. Cook mushrooms with 2 tablespoons water, stirring occasionally, for 5 minutes or until tender. Add spinach and cook for 1 minute or until wilted.
- Meanwhile, preheat grill on medium-high. Place tomato and bacon on an unlined baking tray. Grill for 3 minutes or until bacon is crisp and tomato has softened.
- Place 1 tablespoon water in a 1⁄3-cup (80ml) capacity microwave-safe dish. Carefully crack in egg. Cover with paper towel and microwave on High (100%) for 30–40 seconds or until cooked to your liking. Serve with spinach, mushrooms, bacon and tomato.
Egg cooking time will vary depending upon the power wattage of your microwave. You can also use a microwave egg poacher (available from kitchenware stores and some supermarkets). Add it: ¼ medium avocado (sliced). Swap it: Bacon for 40g smoked salmon (omit cooking).
