Beef pita pockets

These pretty picnic parcels are great for outdoor catch-ups with friends.


Ingredients
Wholemeal pita pocket
2 medium, (2 x 43g)
Hummus
⅓ cup(s)
Snow pea sprouts
50 g, trimmed
Red onion
½ small, thinly sliced
Cherry tomatoes
5 individual, quartered
Beef fillet (tenderloin), cooked without added fat
100 g
Fresh herbs
¼ cup(s), with lemon juice, or leftover chimichurri sauce
Lemon juice
1 tbs

Cut pita pockets in half crossways and carefully separate layers to open out. Spread 1 tablespoon of hummus into each pocket half.

Toss snow pea sprouts, onion, tomatoes, beef and chimichurri together in a medium bowl. Season with salt and pepper. Divide evenly between pita pockets and serve immediately.
