Ingredients

Beef fillet (tenderloin), raw

540 g, (buy 600g), fat trimmed, cut into 3cm pieces

Ground paprika

1 tsp

Ground cumin

¼ tsp

Dried chilli flakes

¼ tsp

Dried oregano

1 tsp

99% fat-free, plain or natural yoghurt, unsweetened

200 g

Fresh mint

2 tbs, finely chopped

Lemon juice

1 tsp

Red onion

1 medium, cut into wedges

Green capsicum

½ medium, cut into chunks

Yellow capsicum

½ medium, cut into chunks

Oil spray

1 x 3 second spray(s)

Instructions

  1. Place beef, paprika, cumin, chilli flakes and oregano in a large bowl. Season with salt and pepper and toss to coat.
  2. Preheat a chargrill or barbecue over high heat. Combine yoghurt, mint and lemon juice in a small bowl. Season with salt and pepper.
  3. Thread beef, onion and capsicum, alternately, onto 6 skewers (see tip). Lightly spray with oil. Cook skewers, turning occasionally, for 10 minutes or until cooked to your liking. Serve kebabs with mint yoghurt.

Notes

If using bamboo skewers, soak in cold water for 10 minutes before threading beef.
