Air fryer balsamic and mustard pork fillet with roasted potatoes

Ingredients

Baby potatoes

750 g, red variety, cut into chuncks

Olive oil

1 tsp

Pork fillet or tenderloin, raw

400 g

Balsamic vinegar

1 tbs

Whole grain mustard

2 tsp

Instructions

  1. Set air fryer temperature to 200˚C.
  2. Toss potato and oil in a bowl. Season and toss to coat. Place pork in a medium bowl with vinegar and mustard. Turn to coat. Season. Place potato in basket and arrange separating grill in basket over potatoes. Place pork on grill. Slide basket into air fryer. Set timer to 6 minutes. Turn pork and toss potato. Set timer to 6 minutes for pork to be cooked. Transfer pork to a plate and loosely cover. Stand for 5 minutes to rest. Meanwhile, set timer to 5 minutes for potatoes to finish cooking.
  3. Slice pork and serve with roasted potatoes.

Notes

SERVING SUGGESTION: Steamed green beans, Brussels sprouts and flat-leaf parsley.
