Ingredients

Cooked broad beans

100 g, peeled

Artichoke hearts, canned, rinsed, drained

400 g

Red onion

Fresh mint

2 tbs, torn

Olive oil

1 tbs

Lemon juice

2 tsp

Instructions

  1. Combine broad beans, artichokes, red onion, fresh mint, olive oil and lemon juice in a bowl. Season with salt and pepper and toss to coat.
