Apricot and cranberry crumble
Apricot, canned in natural juice, drained
1000 g, (1 kg tub) halved
18 g, (1 1/2 tbs)
Dry rolled oats
1 cup(s), (90g)
Shredded or desiccated coconut
¼ cup(s), shredded, (20g)
½ tsp, plus a pinch to sprinkle
⅓ cup(s), (115g)
- Divide apricots among six ½-cup (125ml) capacity microwave-safe dishes. Scatter over cranberries.
- Combine oats, coconut, cinnamon and honey in a medium bowl. Sprinkle oat mixture over cranberries and apricots. Dust with extra cinnamon. Microwave on High (100%) for 2 minutes or until heated through. Set aside for 1 minute to cool slightly before serving.
