Apple and cinnamon barley porridge
Rolled barley flakes
45 g, (⅓ cup)
¼ tsp, plus extra to serve
1 small, unpeeled, cut into matchsticks
- Place barley flakes and 1 cup (250ml) water in a small saucepan over medium-low heat. Cook, stirring, for 8–10 minutes or until mixture has thickened. Remove from heat and stir in cinnamon and ¾ of the apple.
- Serve topped with remaining apple and extra cinnamon.
Rolled barley flakes are made from whole or pearl barley that has been steamed, rolled and dried. Find them in the health-food section of some supermarkets or health-food stores. If unavailable, use traditional rolled oats.
