A quick and easy lunch that’s ready in 15 minutes.

Ingredients

Baguette

300 g, cut into 4 pieces and split

Sundried tomato pesto

2 tbs

Prosciutto fat trimmed

80 g, fat trimmed

Artichoke hearts, canned, rinsed, drained

170 g, sliced

Roasted capsicum, not in oil

100 g, drained, sliced

Rocket

2 cup(s), (60g)

Instructions

  1. Spread baguette bases with pesto. Top with prosciutto, artichokes, capsicum and rocket. Sandwich with baguette tops. Serve.

Notes

TIP: You can toast the baguette if desired.Fire-roasted capsicums are roasted and peeled capsicums in brine. If unavailable, use any roasted capsicum not in oil.
