Anna’s soft serve blueberry and lemon frozen yoghurt

Ingredients
Frozen blueberries
1 cup(s), (150g)
99% fat-free, plain or natural yoghurt, unsweetened
¼ cup(s), (60g)
Lemon zest
2 tsp
Lemon juice
1 tbs
Sugar-free maple syrup
1 tbs
Instructions

Add blueberries, maple syrup, lemon juice and zest into a food processor. Blend until smooth, scraping down the sides once. Add the yoghurt, and blend until just combined.

Scoop mixture into a container. Place cling wrap over the mixture and freeze for 15-20 minutes.

Serve with extra fresh fruit and a sprig of mint.
