Reduced-fat ricotta cheese
250 g
99% fat-free, plain or natural yoghurt, unsweetened
200 g
Lemon(s)
1 medium, (zest and juice)
Meringue
25 nest, mini, (mini variety)
Fresh raspberries
20 piece(s)
Fresh blueberries
40 piece(s)
Fresh strawberries
7 individual, halved
Passionfruit(s)
1 medium
Dark chocolate chips
2½ tsp
Fresh mint
10 sprig(s)
Natural sweetener
2 tsp, (icing sugar substitute)
Instructions

In a small food processor add ricotta yoghurt, lemon zest and juice. Process until smooth. Spoon into a pipping bag with a star nozzle.

Arrange meringues into a wreath shape. Pipe each with ricotta filling.

Decorate with fresh fruit, choc chips and mint. Dust with icing sugar.
