Golden veggies in tomato puree, ratatouille is an ideal addition to your winter menu.


Ingredients
Tomato(es)
8 medium, diced
Garlic
1 clove(s), finely sliced
Brown onion
2 medium, finely sliced
Eggplant
1 medium, cut into 2cm cubes
Zucchini
1 medium, cut into 2cm cubes
Olive oil
1 tbs
Fresh thyme
2 tbs, sprigs, leaves removed
Instructions

Heat air fryer to 160°C. Place tomato, garlic, onions, eggplant and zucchini in a 21cm square oven dish.

Drizzle with oil and thyme, and toss well. Place in the airfryer for 17 minutes.
