Ingredients
Turkey breast mince
800 g
Whole grain oat flour
½ cup(s), (50g)
Egg(s)
2 large, lightly beaten
Brown onion
1 medium, finely chopped
Fresh thyme
2 tbs, leaves, finely chopped
Fresh flat-leaf parsley
2 tbs, finely chopped
Garlic
2 clove(s), crushed
Tomato(es)
1 large, cut into 10 thin slices
Grated parmesan cheese
2½ tbs, (finely grated)
Oil spray
1 x 3 second spray(s)
Instructions

Preheat oven 180C. Lightly spray 2 x 5 hole ½ cup (125ml) capacity silicone dome moulds or muffin trays with oil.

Combine mince, flour, eggs, onion, herbs and garlic in a large bowl. Season with salt and pepper. Spoon mixture evenly among moulds and smooth surface.

Bake for 35 minutes or until golden brown. Stand meatloaves in tray for 5 minutes. Line a shallow sided baking tray with baking paper. Remove meatloaves from moulds and place on prepared tray. Top meatloaves with a slice of tomato and 1 teaspoon parmesan cheese each. Return to oven for 6-8 minutes, until tomato is cooked and parmesan is golden brown. Serve warm.
