5 minute pesto chicken salad
Lemon rind might not seem like a major player here, but the citrusy zing brings an unexpected bright note to this tasty chicken combo. Ready in just 5 minutes, it’s great served in lettuce cups, on whole grain crispbreads, or in wholemeal wraps.
99% fat-free plain Greek yoghurt
½ cup(s), (120g)
⅓ cup(s), (85g)
Fresh lemon rind
1 tsp, finely grated
Cooked skinless chicken breast
350 g, shredded
- Whisk yoghurt, pesto and lemon rind in a medium bowl. Season
- with salt and pepper. Add chicken and stir gently to combine. Serve.
