Eggplant is a versatile vegetable that can be used in a variety of dishes such as dips, stews, curries, and salads. Here are some additional tips to help you buy and prepare eggplant:
If you're unsure about the freshness of an eggplant, press the flesh with your thumb. If it springs back, it's fresh. If it leaves an indentation, it's less fresh.
Store eggplant in the crisper section of your fridge. They’re best used within 3-4 days of purchase.
To reduce the bitterness of eggplant, sprinkle salt on the slices and let them sit for about 30 minutes. Rinse the slices and pat them dry before cooking.
If you're grilling or roasting eggplant, you can add some flavour by brushing it with a mixture of olive oil, balsamic vinegar, and honey before cooking.
For a delicious side dish, try slicing eggplant into rounds, brushing with olive oil, and seasoning with salt and pepper. Roast in a 200°C oven for about 20 minutes or until golden and tender.
Eggplant can also be used as a substitute for meat in vegetarian dishes. Try using it in lasagna, moussaka, or stir-fries.
