the crumbs make the fish have some taste, mahi is dense like tuna
I think the breading overpowers the very mild taste of Mahi-Mahi. I cooked one piece with no coating and enjoyed it so much more. A mild fish like this needs a simple process like a saute or poach.
Best fish I've eaten inquite some time
Had to make a couple of substitutions but it worked out fine. Used dry roasted peanuts instead of macadamia nuts and herbs provencal instead of cilantro. Also, after cooking, added a touch of lemon juice. It was great!
