I couldn't find no-fat mayo so I used low fat instead, and I used Pepperidge Farm Rye/Pump swirl. This recipe tasted very good, and I could see it being a workweek lunch staple.
I love this receipe but instead of adding parsley I add chopped dill pickle it doesn't take a lot but it is great.. I only gave it a four as I don't like pumpernickle bread but I use
wheat sandwich rounds
I love this egg salad! It is so filling and you don't feel like you are missing anything without the egg yolks. I add a little apple cider vinegar (about a tsp or so of each). It helps give it a little bit of a zing and stretches out the mayonnaise. I use yellow mustard instead of dijon because I prefer it.
This is a very tasty sandwhich. I did not use the onions and it still had a nice flavor.
