Very good recipe! I only had 2 eggs so I did a single portion by halfing all of the ingredients. Turned out great.
I couldn't find no-fat mayo so I used low fat instead, and I used Pepperidge Farm Rye/Pump swirl. This recipe tasted very good, and I could see it being a workweek lunch staple.
I love this receipe but instead of adding parsley I add chopped dill pickle it doesn't take a lot but it is great.. I only gave it a four as I don't like pumpernickle bread but I use
