Ingredients

Basmati rice

1 cup(s), (180g)

Fresh flat-leaf parsley

2 tbs, finely chopped

Fresh coriander

2 tbs, chopped

Red onion

½ small, finely chopped

Fresh tarragon

2 tbs, finely chopped

Fresh lemon rind

1 tsp, finely grated

Garlic

1 clove(s), small, crushed

Olive oil

1½ tsp

Instructions

  1. Cook rice in a large saucepan of boiling water following packet instructions. Drain.
  2. Meanwhile, combine onion, parsley, coriander, 1 tablespoon tarragon, rind, garlic and oil in a large bowl. Add rice and stir to combine. Season with salt and pepper. Serve sprinkled with remaining tarragon.
