Sweet potato breakfast hash
A colourful medley of veggies roasted to perfection for a tasty side or a stand alone meal.
Orange sweet potato (kumara)
600 g, diced
2 medium, diced
1 large, diced
- Preheat oven to 220°C. Line a baking tray with baking paper.
- Combine potato, onion and capsicum in a large bowl. Add oil, season with salt and toss to combine. Spread in an even layer on prepared tray. Bake, stirring halfway through, for 30 minutes or until browned. Sprinkle with fresh thyme to serve.
TIP: Serve with eggs cooked your favourite way (not vegan).
