Ingredients

Orange sweet potato (kumara)

500 g, cut into 2cm chunks

Avocado

1 medium, diced

Mixed salad leaves

150 g

Reduced fat feta cheese

40 g

Za'atar seasoning

1½ tsp

Ground paprika

½ tsp

Olive oil

2 tsp

Apple cider vinegar

1½ tsp

Oil spray

1 x 3 second spray(s)

Instructions

  1. Preheat oven to 200°C. Place sweet potatoes on a large baking tray and lightly spray with cooking oil. Scatter over spices and season with salt and pepper. Toss to coat, then bake for 25 minutes, turning halfway or until crisp and golden.
  2. Whisk oil and vinegar in a large bowl and season with salt and pepper. Add avocado and salad leaves and toss to coat.
  3. Serve topped with sweet potato and feta.

Notes

TIP: This salad is best served while the sweet potato is still warm.
