Ingredients

Polenta

cup(s), (55g)

Cajun seasoning

1 tsp

Skinless white fish, raw

4 fillet(s), (4 x 150g), firm variety

Pumpkin

500 g, peeled, chopped

Broccolini

2 bunch(es), steamed, to serve

Lemon(s)

1 medium, wedges, to serve

Oil spray

1 x 3 second spray(s)

Instructions

  1. Preheat oven to 200°C. Line a baking tray with baking paper. Combine polenta and seasoning on a plate. Press each fish fillet into polenta to coat all sides. Place fish on prepared tray and lightly spray with oil. Bake for 10-15 minutes or until golden and cooked through.
  2. Meanwhile, boil, steam or microwave pumpkin until tender. Drain, and mash until smooth.
  3. Serve fish with mashed pumpkin, steamed broccolini and lemon wedges.
