Scallops on mango salsa

A combination of uniquely summer flavours, this fragrant mango salsa is the perfect accompaniment for fresh scallops or prawns


Ingredients
Red capsicum
15 g, (2 Tbs) finely chopped
Mango
½ medium, peeled, finely chopped
Fresh coriander
1 tbs, finely chopped
Fresh chives
1 tbs, finely chopped
Scallop(s)
240 g, without roe (12 individual)
Olive oil
1 tsp
Lime juice
1 tbs
Instructions

Combine capsicum, mango, coriander and chives in a small bowl. Divide mixture evenly among twelve Chinese soup spoons.

Gently toss scallops with oil. Heat chargrill over high heat. Add the scallops and cook for 1 minute each side or until cooked and golden. Sprinkle with lime juice. Place scallops on top of salsa in spoons. Serve.
