Wholemeal self-raising flour

Rolled oats, dry
1 cup(s), (90g)
Shredded or desiccated coconut
½ cup(s), (35g)
Reduced fat oil spread
150 g
Brown sugar
½ cup(s), (110g)
Fresh dates
200 g, pitted, chopped
Bicarbonate of soda
1 tsp
Egg(s)
1 medium, lightly beaten
Icing sugar
1 tsp, for dusting

Preheat oven to 180°C or 160°C fan-forced. Line base and sides of a 17cm x 27cm (base measurement) slice tin with baking paper, allowing paper to overhang on both long sides.

Place flour, oats and coconut in a large bowl and stir to combine. Place spread, brown sugar and dates in a small saucepan over medium heat. Cook, stirring, for 2 minutes or until melted and combined. Remove from heat. Stir in bicarbonate of soda.

Make a well in the centre of flour mixture. Add date mixture and egg and stir to combine. Spread mixture into prepared tin. Using the back of a metal spoon, smooth the top. Bake for 18–20 minutes or until golden brown and firm to touch. Remove from oven and set aside to cool completely. Cut into 16 pieces and dust with icing sugar to serve.
