Roasted broccoli and soba noodle salad

This colourful Asian-style salad is so much healthier than a takeaway, but tastes just as good.

Ingredients

Broccoli

1 head(s), halved, broken into floret

Soba noodles 100% buckwheat

200 g

Lime juice

2 tbs

Soy sauce

2 tbs

Sesame oil

1 tbs

Fresh red chilli

1 whole, deseeded, finely chopped

Fresh coriander

¼ cup(s), coarsely chopped

Green shallot(s)

3 individual, sliced

Oil spray

1 x 3 second spray(s)

Instructions

  1. Preheat oven to 200°C. Line a baking tray with baking paper. Spread broccoli out on prepared tray and lightly spray with oil. Bake for 20 minutes, turning halfway through, or until golden and just softened. Set aside to cool.
  2. Meanwhile, cook noodles following packet instructions. Drain. Refresh under cold water and drain.
  3. Whisk juice, soy, oil and chilli in a large bowl. Add noodles, broccoli, coriander and shallots. Toss to coat. Serve.
