Roasted broccoli and soba noodle salad
1 head(s), halved, broken into floret
Dry soba noodles (100% buckwheat)
Fresh red chilli
1 whole, deseeded, finely chopped
¼ cup(s), coarsely chopped
3 individual, sliced
1 x 3 second spray(s)
- Preheat oven to 200°C. Line a baking tray with baking paper. Spread broccoli out on prepared tray and lightly spray with oil. Bake for 20 minutes, turning halfway through, or until golden and just softened. Set aside to cool.
- Meanwhile, cook noodles following packet instructions. Drain. Refresh under cold water and drain.
- Whisk juice, soy, oil and chilli in a large bowl. Add noodles, broccoli, coriander and shallots. Toss to coat. Serve.
