Ingredients
Chia seeds
75 g
Unsweetened coconut milk
400 ml
Maple syrup
2 tsp
Vanilla bean extract, alcohol free
½ tsp
Pineapple
450 g, fresh, chopped
Coconut flakes
10 g
Low sugar granola
⅓ cup(s), (30g)
Instructions

Combine chia seeds, coconut milk, maple syrup and vanilla extract in a medium bowl. Cover and chill for at least 45 minutes, or until all liquid is absorbed.

Divide half the chia mixture among 4 large (3-cup to 1L capacity) jars or serving glasses then divide half the pineapple among each. Repeat with remaining chia mixture and pineapple. Top with coconut flakes and granola to serve.
