Pea and bacon soup
This pea and bacon soup is hearty, mild and satisfying. Perfect for a chilly evening.

2 slice(s), (2 x 25g slices), roughly chopped
2 individual, finely chopped
Frozen green peas
350 ml, heated
- Lightly spray a deep frying pan with oil and add the chopped bacon. Cook, stirring for 2-3 minutes, until browned. Remove from the pan and set aside.
- Add the spring onions to the pan with the hot vegetable stock and the thyme leaves. Bring to the boil, then reduce the heat and simmer for 1 minutes. Remove from the heat and ladle into a blender, or use a hand held blender. Blend until smooth and pour back into the pan.
- Add the skim milk and season to taste. Warm through and ladle into a bowl or large mug. Top with the crispy bacon and serve.
SERVING SUGGESTION: Sourdough bread.
