Blackberry and vanilla bean muddle
granulated stevia sweetener
1 whole, split, seeds scraped
150 g, thawed or fresh
3 cup(s), 750ml
- Place stevia, vanilla bean and seeds, cinnamon stick and 2/3 cup (160ml) of water in a small saucepan. Cook, stirring, over medium heat until the stevia dissolves. Simmer until the syrup is reduced by half. Set aside to cool slightly. Discard the vanilla bean and cinnamon stick.
- Combine the blackberries and sugar syrup in a large jug. Muddle with the end of a wooden rolling pin until the blackberries are gently crushed.
- Divide the berry mixture between glasses. Top with soda water and ice cubes.
