Ingredients

Rolled oats, dry

2¼ cup(s), (205g)

Brown sugar

¼ cup(s), (55g)

Cocoa powder

¼ cup(s), (25g)

Baking powder

1 tsp

Skim milk

1 cup(s), (335ml)

Egg(s)

2 medium, lightly beaten

Vanilla bean extract, alcohol free

2 tsp

Apple(s)

2 medium, peeled, grated

Mango

1 medium, thinly sliced

Oil spray

1 x 3 second spray(s)

Instructions

  1. Combine oats, sugar, cocoa, baking powder and ½ teaspoon salt in a large bowl and make a well in centre. Add milk, eggs, vanilla and ¾ cup (185ml) water. Mix well combined. Stir in grated apple. Cover and refrigerate for 8 hours or overnight.
  2. Preheat oven to 170°C. Lightly spray a 35cm x 10cm rectangular tart tin with oil. Spread oat mixture evenly into prepared tin. Place tin on a baking tray and bake for about 20 minutes or until mixture is firm in centre when lightly touched with fingertips. Cool in tin, then remove and cut into 8 bars. Top with mango slices to serve.

Notes

TIP: When mangoes aren’t in season, top with fresh mixed berries.
