Baby cos and grape salad

360 g, (2 heads), leaves separated
Red globe grapes
300 g, halved
Apple cider vinegar
¼ cup(s), shredded
2 tbs, toasted
- Place snow peas and asparagus in a large heatproof bowl. Have a large bowl of iced water ready. Cover snow peas and asparagus with boiling water. Stand for 1 minute, then drain and plunge into iced water. Drain and pat dry with paper towel.
- Cut asparagus spears in half lengthways (unless very thin), then in half crossways. Thinly slice snow peas lengthways. Place in a large bowl with lettuce and grapes.
- Whisk vinegar and oil together and season with salt and pepper. Drizzle over salad. Sprinkle with mint and almonds.
