A great option for an easy and delicious breakfast, creamy overnight oats can be made up to 2 days ahead and stored in the fridge.

Ingredients

Skim milk

1½ tbs

99% fat-free, plain or natural yoghurt, unsweetened

¼ cup(s), (60g)

Vanilla bean paste

½ tsp

No added sugar apple puree

2 tbs

Quick oats

½ cup(s), (45g)

Apple, granny smith, unpeeled, fresh

½ medium, coarsely grated

Fresh dates

2 individual, pitted, coarsely chopped

Maple syrup

½ tsp

Ground cinnamon

¼ tsp

Instructions

  1. Combine milk, yoghurt, vanilla, apple purée, oats, apple and half the dates in a medium bowl. Spoon mixture into a 1¼-cup (310ml) capacity jar, glass or reusable container. Cover and refrigerate overnight.
  2. Top with remaining dates, drizzle with syrup and sprinkle with cinnamon to serve.

Notes

TIP: Store in an airtight container in the fridge for up to 2 days. VARIATION: Swap apple for ½ pear (grated).
