A simple way to enjoy your falafels with very little prep involved. To save more time, use store-bought pita chips instead.

Ingredients

Wholemeal lebanese bread

½ medium, torn into small pieces, (40g)

Mixed salad leaves

2 cup(s), (60g)

Red onion

½ small, thinly sliced

Cherry tomatoes

10 individual, quartered

Lebanese cucumber

1 medium, roughly chopped

Air fryer falafels (WW recipe)

8 individual

Fresh flat-leaf parsley

1 tbs, chopped

Lemon(s)

1 medium, wedges, to serve

Oil spray

1 x 3 second spray(s)

Tahini

25 g

Lemon juice

2 tbs

Maple syrup

1 tsp

Instructions

  1. Preheat air fryer to 180°C. To make pita chips, place Lebanese bread in a bowl and lightly spray with oil. Toss to coat. Arrange bread in air fryer basket and cook for 6-7 minutes until golden and crisp. Transfer to a plate and set aside.
  2. Meanwhile, to make tahini dressing, whisk tahini, lemon juice, maple syrup and 3 tablespoons water in a small bowl. Season with salt and pepper.
  3. Divide salad leaves, onion, tomatoes and cucumber between 2 serving bowls. Top with falafels and pita chips, then drizzle over dressing. Sprinkle with parsley and lemon wedges to serve.
