Salmon is so nutritious and equally delicious. Loaded with healthy, satiating omega-3 fatty acids and quality protein, it should have a regular starring role on your dinner plate. Jarred citrus salad, available in the produce section of the supermarket, can be substituted for the orange and grapefruit sections. If you're cilantro-averse, try fresh chervil, parsley, or basil instead. Like things spicy? Use a finely chopped serrano or habanero in place of the jalapeño.

Ingrédients

Uncooked farmed salmon fillet with or without skin

1½ pound(s), four 6-oz pieces

Cooking spray

1 spray(s)

Olive oil

1 tsp(s)

Table salt

½ tsp(s)

Black pepper

⅛ tsp(s)

Orange

1 large, coarsely chopped (about 1 cup)

Grapefruit

1 large, coarsely chopped (about 1 cup)

Cilantro

2 tbsp(s), minced

Red bell pepper

½ cup(s), chopped, chopped

Red onion

¼ cup(s), sliced, finely chopped

Jalapeño pepper

1 small, seeded and finely chopped

Preheat the broiler.

Place the salmon fillets on rack of a broiler pan coated with cooking spray. Brush the fillets with olive oil; sprinkle them with salt and pepper. Broil until the fish flakes easily when tested with a fork, 10 to 12 minutes.

While the fillets cook, in a medium bowl, combine the orange sections and the remaining ingredients to make the salsa. Serve the fillets with the salsa.

Serving size: 1 fillet and about 2⁄3 cup salsa
