Ambrosia Salad

Ambrosia means “the food of the gods,” the perfect name for this creamy fruit salad. You may find lots of variations in recipes for this treat, often served during the holidays, but the one thing there is in common is a pineapple cream dressing. You can make the sauce 1 day ahead, then all that's left to do is to just mix in the fruit before serving. If you'd prefer, you can skip the pecans, or substitute with another nut, such as walnuts.


Ingrédients
Uncooked egg yolks
2 large
Sugar
2 tsp(s)
All-purpose flour
1 tsp(s)
Pineapple juice
½ cup(s), or orange juice
Vanilla extract
½ tsp(s)
Lite whipped topping
1 cup(s)
Tangerine
4 medium, peeled and segmented
Banana
3 medium, sliced 1 inch thick
Red seedless grapes
1½ cup(s), or pitted cherries
Pineapple
1 cup(s), bite-size pieces
Unsalted pecan halves
2 tbsp(s), chopped, toasted, roughly chopped
Freshly grated nutmeg
¼ tsp(s), (optional)
Instructions

In medium heatproof bowl, whisk egg yolks, sugar, and flour. In small saucepan, bring pineapple juice and vanilla to simmer. Remove from heat. Very gradually pour hot juice into egg yolks, whisking constantly. Scrape pineapple juice mixture into saucepan and cook over low heat, stirring constantly, until thickened, about 5 minutes. Transfer to medium bowl. Cover and refrigerate until cold, about 1 hour or up to overnight.

Just before serving, gently fold whipped topping into pineapple juice mixture. In large bowl, toss tangerines, bananas, grapes, and pineapple. Fold in pineapple whipped topping. Spoon into small cups or bowls. Top with nuts and nutmeg (if using).
