Put a fun Latin American spin on this classic dinner recipe in this easy meatloaf that takes just 15 minutes of prep time. Cook this spiced-up meatloaf on a broiler pan so any excess fat can drip away. Line the bottom of the pan with foil for speedy clean up. If you want to add another Mexican element to this dish, consider substituting Mexican chorizo for the lean ground turkey or the beef. Make sure you buy Mexican—not Spanish—chorizo as the two are quite different. The Mexican variety is a spicy ground meat sausage that works beautifully here, and the assertive spices and flavour will further ratchet up this dish.
