This traditional Argentinian salad combines hearts of palm with avocado and tomato, all tossed with a fresh lime-cilantro dressing.

Ingrédients

Water

3 Tbsp

Fresh lime juice

2 Tbsp

Olive oil

1½ Tbsp, extra virgin

Table salt

¼ tsp

Black pepper

¼ tsp, freshly ground

Uncooked scallions

3 Tbsp, sliced

Cilantro

2 Tbsp, fresh, chopped

Hearts of palm

14 oz, canned, drained, sliced 1.25-cm (1/2-in) thick

Tomato

2 small, roughly chopped

Avocado

1 medium, uncooked, Hass, sliced

Instructions

  1. In a serving bowl, combine water, lime juice, oil, salt and pepper; stir in scallions and cilantro.
  2. Add hearts of palm, tomatoes and avocado to bowl; gently toss to coat. Yields about 310ml (1 1/4 cups) per serving.
