Ingredients
Uncooked ground turkey dark meat
24 oz
Apple
0.5 medium
Mango chutney
2 tbsp(s)
Uncooked scallions
1 medium
Garlic
2 clove(s), large
Cilantro
0.25 cup(s)
Soy sauce
1 tbsp(s)
Curry powder
0.5 tsp(s)
Ground chipotle chili
0.5 tsp(s)
Sea salt

Olive oil cooking spray

Place the turkey in a large bowl, cover with a dish towel, and let come to room temperature while you prep the rest of the ingredients.

In a food processor, combine the apple, mango chutney, scallion, garlic, cilantro, soy sauce, curry powder, chipotle , and salt and process until smooth. Add the mixture to the turkey and mix thoroughly to combine. Divide the mixture into four equal portions and form each into a loose ball. Pat lightly to flatten the meat into burgers about 3/4 inch thick.

Heat a large, heavy skillet, preferably cast-iron, over medium-high heat. Spray with a thin layer of oil and add the burgers. Cook until nicely browned on the bottom, 4 to 5 minutes, then flip the burgers, reduce the heat to medium-low, cover the pan, and cook for about 6 minutes, until browned on the bottom and cooked through. Remove from the pan and serve.

While the burgers are cooking, place the split pretzel buns on the grill cut side down to toast them (or toast them in a toaster). Remove the buns from the grill, sandwich the burgers into the buns, and add your choice of condiments.
