If you have a panini press, great! If you don't, no worries since a ridged grill pan works so well. To add more spicy flavour to the sandwiches, use peppery baby arugula instead of spinach.


Ingrédients
Olive oil cooking spray

Reduced calorie mayonnaise
2 tbsp(s)
Light whole grain bread
4 slice(s)
Shredded reduced-fat Mexican-style cheese
6 tbsp(s)
Apple
1 small, cut into 8 very thin slices
Deli sliced turkey breast
6 oz
Baby spinach
½ cup(s), lightly packed
Instructions

Spread 1/2 tbsp mayonnaise on one side of each slice of bread. Top 2 bread slices evenly with cheese, apple, turkey, and spinach. Top with the remaining 2 bread slices, mayonnaise-side down. Lightly coat the sandwiches with cooking spray.

Coat a panini press with cooking spray and preheat it (or coat a ridged grill pan with cooking spray and set it over medium heat). Place the sandwiches on the press and close the lid (or place them on the grill pan and cover with a heavy skillet, flipping once half way through cooking). Cook until the sandwiches are browned and the cheese is melted, about 5 minutes. Cut each sandwich in half.
