Zucchini

Shortcut bacon

Light cream
½ cup(s), (125ml)
Grated parmesan cheese

Fresh flat-leaf parsley
⅓ cup(s), finely chopped
Instructions

Cut zucchini into long strands using a spiraliser.

Heat a large deep frying pan over medium-high heat. Cook bacon, stirring, for 2 minutes or until browned and crisp. Add zucchini and cook, stirring, for 2-3 minutes or until just tender.

Meanwhile, combine eggs, cream and parmesan In a jug. Season with pepper.

Remove pan from heat. Immediately add egg mixture and toss to coat. Serve sprinkled with parsley.
