Zucchini zoodle carbonara

Ingredients

Zucchini

6 medium

Shortcut bacon

150 g

Egg(s)

3 medium

Light cream

½ cup(s), (125ml)

Grated parmesan cheese

½ cup(s), (40g)

Fresh flat-leaf parsley

cup(s), finely chopped

Instructions

  1. Cut zucchini into long strands using a spiraliser.
  2. Heat a large deep frying pan over medium-high heat. Cook bacon, stirring, for 2 minutes or until browned and crisp. Add zucchini and cook, stirring, for 2-3 minutes or until just tender.
  3. Meanwhile, combine eggs, cream and parmesan In a jug. Season with pepper.
  4. Remove pan from heat. Immediately add egg mixture and toss to coat. Serve sprinkled with parsley.

Notes
