Zucchini, red onion and tomato pan fry

This simple vegie side also makes a great meatless main meal. Just serve over rice, pasta or couscous (contains gluten), with a sprinkling of parmesan (contains dairy).

Ingredients

Olive oil

2 tsp

Zucchini

2 small, cut into 3cm cubes

Red onion

1 medium, thinly sliced

Cherry tomatoes

1 cup(s), (160g), grape variety

Garlic

2 clove(s), crushed

Fresh basil

⅓ cup(s), roughly torn leaves

Instructions

Heat oil in a large non-stick frying pan over high heat. Add zucchini and onion, cook, stirring occasionally, for 5 minutes or until zucchini and onion are golden and tender.

Add tomatoes and season with salt and pepper and cook over medium-high heat, stirring frequently, for 2 minutes or just until tomatoes start to soften.

Add garlic, cook over medium heat, tossing, for 30 seconds or just until fragrant.

Remove from heat and stir in basil. Check seasoning and serve.
