- Preheat oven to 180℃. Line a baking tray with paper. Toss broccoli, cherry tomatoes, garlic, and 2 teaspoons lemon juice in a medium bowl. Spread over prepared tray and bake for 20 minutes.
- Heat a large deep saucepan over medium heat. Cook zucchini and pumpkin, covered, for 3 minutes. Toss through roasted broccoli and tomato mixture, oregano and remaining lemon juice. Season with salt and pepper. Serve.
