This all-vegetable dish is the perfect go to meal! Customise it by using pumpkin, carrot, and/or beet spirals, and swapping in any roasted veggies you have on hand. Enjoy your primavera as is or add some sliced chicken breast or prawns, a sprinkle of Parmesan cheese, or a few spoonfuls of ricotta.

Ingredients

Broccoli

½ cup(s), (50g), florets

Cherry tomatoes

½ cup(s), (80g)

Garlic

1 clove(s), thinly sliced

Lemon juice

1 tbs

Zucchini

1 large, spiralised

Butternut pumpkin

200 g, peeled, spiralised

Fresh oregano

1 tbs

Preheat oven to 180℃. Line a baking tray with paper. Toss broccoli, cherry tomatoes, garlic, and 2 teaspoons lemon juice in a medium bowl. Spread over prepared tray and bake for 20 minutes.

Heat a large deep saucepan over medium heat. Cook zucchini and pumpkin, covered, for 3 minutes. Toss through roasted broccoli and tomato mixture, oregano and remaining lemon juice. Season with salt and pepper. Serve.
