Refreshing watermelon and lime jelly is perfect on a hot summer afternoon. Finish it off with a dollop of yoghurt and extra strips of lime zest.

Ingredients

Watermelon

1500 g, coarsely chopped

Lime rind

2 tsp, plus extra to serve

Lime juice

¼ cup(s), (60ml)

Gelatine

1½ tbs

99% fat-free, plain Greek yoghurt, unsweetened

1 cup(s), (240g)

Instructions

  1. Line base and sides of a 8cm-deep, 8cm x 17cm loaf tin with baking paper. Process watermelon in a food processor until smooth. Stir in rind and juice. Strain mixture into a large bowl or jug. You will need about 1 litre (4 cups) of watermelon mixture.
  2. Sprinkle gelatine over ¼ cup (60ml) boiling water in a small bowl. Whisk until gelatine has dissolved. Stir gelatine mixture into watermelon mixture until combined.
  3. Pour watermelon mixture into prepared tin. Cover and place in fridge overnight or until jelly has set. Serve jelly with yoghurt and extra lime zest.

Notes

TIPS: Use a microplane grater to grate lime rind and a citrus zester to cut strips of lime zest. You can add fresh mint leaves when processing the watermelon.
